Operator – This is the restaurant, or foodservice operation within a B&I, C&U, healthcare, etc.
B&I – Business and Institutions – For foodservice, these are businesses with a cafeteria for employee feeding. In addition to being a nice perk for the employee, they stay on the work campus and can put in more hours working effectively.
C&U – Colleges and Universities
QSR – Quick Service Restaurant
POS – Point-of-sale. This could be the technology used in a restaurant to process customer orders or sales materials, printed or electronic.
DSR – Distributor Sales Representative is who calls on operators to sell products for the broadline foodservice distributor.
Broker – Full-service sales and marketing company to assist with pioneering and/or selling of products within the industry
FOH – Front of House. This is the section of the restaurant where you will find customers
BOH – Back of House. The kitchen and storage area of a restaurant
CRM – Customer Relationship Management – this tool helps you track activity with customers all through the sales pipeline.
Yield – When you cook an item, you start with one weight and end up with another. Cook a 4-ounce beef burger and you end up with about 3-oz. Prepare 2-ounces of pasta and your yield is about 4-ounces!
